In 2007 we handpicked two hogs from Ballard Farm to create our first batch of artisan salami. Though our needs have grown exponentially, we remain committed to choosing animals with the same care and consideration as that first weekend visiting the farm.


The natural, healthy qualities of raw milk infuse Grafton Village Cheese products with a creamy, smooth flavor not found in mass-produced cheeses.

Pinsa is the ancestor of pizza. The term "pinsa" comes from the Latin term “pinserie”, which means “to crush, to grind, to beat”. During the Roman Empire, pinsa was made by the peasants, grinding grains, millet, barley, oats, and farro, adding water and salt and it was given to the gods to get wealth.
